Better than Bars Balls: Homemade snaccidents waiting to happen

One of the things I'm trying to do more of is making my own food. I rely perhaps too much on being able to grab an energy bar or a granola bar--which means I overpay, buying them one at a time, and I end up eating some things I probably would do better to avoid. I'm down for saving money, eating healthier, and making things from scratch--especially when I can figure out a delicious way to do it!

One of my most favourite recipes for a bar-like option is from Jennifer Broxterman for her No-Bake Energy Bites. I've been making these bad boys in different iterations for a few years, and I need to give her credit for the original recipe which started it all. At first, I certainly stuck with the measurements and the ingredients, but over time I've started to work with what's in the kitchen and have gotten braver throwing things into the bowl and seeing what happens. The recipe below is one of the successes--the balls are tasty and have a pretty good consistency, but maybe I just got lucky with the peanut butter brand and the way my honey was kind of starting to crystallize. I'll take any luck I can get! 

Better than Bars Balls


1 cup oats (I used quick oats)
1 scoop protein powder (I used chocolate)
1/2 cup shredded coconut, unsweetened
1/4 cup ground flaxseed and chia seeds
1/2 cup honey
2/3 cup peanut butter, melted (I used smooth natural)
1 tsp. vanilla
1 handful chocolate chips
sprinkle of sea salt

Combine all ingredients in a mixing bowl. Stir 'til evenly mixed, then use hands to roll into balls the size of your choosing. 
Keep in refrigerator, or freeze for portion control help and to keep fresh for longer.
